The two grapes in this wine are fermented separately as the Merlot earlier than the other grapes.
Merlot grapes, whose ripening period is at the end of September, is macerated for longer as tannins are sweeter and less aggressive.
The Cabernet, which is harvested at mid-October, is drawn off to guarantee the best expression of the grape.
The wine is bottled in March after the malolactic fermentation and a short aging period in second and third passage barriques, to ensure freshness.
