The Pinot Grigio is a red variety with very low anthocyanins. To obtain a white wine it is necessary to work with great care to avoid colouring the wine. The grape bunches are whole-bunch-pressed, ensuring skins are not crushed.
During clarification the must is hyper-oxidised to facilitate the precipitation of the anthocyanins and prevent colouring. With no maceration it is necessary to extend the fermentation at low temperature to develop a good aroma.
The juice is left on its lees for at least one month to add complexity to the wine. It has a big flavour and fruity characteristics, never overstated. On the palate it is balanced and elegant.
